Uchi: The Cookbook - recipes from the best Japanese Restaurant in America

We recommend this amazing modern Japanese cookbook by an extraordinary American chef, who has spent very little time in Japan and who speaks little Japanese.  

The book has amazingly good looking HD food graphics. It is filled with original recipes inspired by modern gastronomy, with a molecular gastronomy twist. It's a spin on traditional Japanese sushi and sashimi offerings. 

Yuzu, shiso, ginger, and ume (plum) are still familiar ingredients and themes that permeate the book. The book indeed showcases many original house-made sauces with Japanese roots.  However, it really shocks critics with powdered and crystalized cheese served with seaweed, exquisite American rolls with fresh fruits caviar, sashimi with complex sweet and sour flavors,  and fried milk pockets (dessert). 

And it's not just a book that looks pretty. Uchi is a real restaurant in Austin, the new capital of food. It flies its fishes in from Japan and source them from prime sushi locations of the world pending seasonal changes and fishing output. Its sister restaurants are located in Austin and Houston... yes Texas out of all places.
